NOW YOU’RE COOKING!\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e“When you cook a burger on a flat-top griddle or in a cast-iron skillet, it cooks in its own juices – you can almost consider it hamburger confit – and the juice becomes the burger's own condiment. Your job, then, is to elevate that moment. You get these super beefy flavors happening and then the question is, ‘Where do you go from there?’ The simple answer is: salt.”\u003c\/p\u003e\n\u003ch6\u003e\u003cstrong\u003e2. EARN YOUR SALT.\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e“Season the burgers after dropping them on the grill, to help the physical process of cooking. Bourbon smoked salt is packed with a lot of smoky flavor, but use it sparingly, because the crystals are huge! Salting too early will bind the muscle fibers together and make your burger tough (yuck).”\u003c\/p\u003e\n\u003ch6\u003e\u003cstrong\u003e3. FLIP IT GOOD.\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e“Flipping is the key to success, and also the part people screw up most often. Don’t be a hero and try to figure this out on your own – there is science going on here! Liquid inside the patties is trying to get away from the heat source, so it bubbles up through the beef. When the top of the patty begins to glisten with red juices, it’s time to flip and ‘seal’ the other side of the burger to keep those flavorful juices inside.”\u003c\/p\u003e\n\u003ch6\u003e\u003cstrong\u003e4. OPTIONAL: SAY CHEESE.\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e“As soon as you flip, slide a slice of Plymouth’s Hunter Cheddar on top of the patty. The aged Cheddar is excellent – its funky, sharp quality complements beef grease well. Cheddar doesn’t melt as well as something like American, though, so you may need to cover the burgers briefly for ultimate gooeyness.”\u003c\/p\u003e\n\u003ch6\u003e\u003cstrong\u003e5. GET TOASTED.\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e“I usually go for a potato bun, but bigger burgers should be on a big, sturdy, seeded roll. And stay away from the toaster! Use my pan-toasting method instead: Spread a thin, even layer of butter on both bun halves, place them buttered-side-down in a hot skillet and crisp to a tasty golden brown. My biggest tip here: Get someone else to deal with the buns while you focus on the burgers – gotta have a Bun Man. A Bun Woman…A Bun Person.”\u003c\/p\u003e\n\u003ch6\u003e\u003cstrong\u003e5. DOPE UP.\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e“You have to dope the bun – that’s what it’s called when you prep it! Grab the bottom bun and layer the pickles on that to create a ‘barrier’ between the juicy burger and the bread. Spread a thin swipe of mustard on the top bun. Place the patty on top of the pickles, then add a spoonful of onion confit, Onions are as crucial as salt, in my opinion. Then finish with the top bun.”\u003c\/p\u003e\n\u003ch6\u003e\u003cstrong\u003e6. FROM HAND TO MOUTH.\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e“If you’ve followed the ‘hamburger architecture’ closely, the first bite should be about every element, with an even taste of everything. The goal is to build a solid burger that you don’t want to put down. The best burgers I’ve ever had? They don’t ever make it back down to the plate.”\u003c\/p\u003e\n\u003ch6\u003e\u003cstrong\u003e7. DON’T TAKE SIDES.\u003c\/strong\u003e\u003c\/h6\u003e\n\u003cp\u003e\u003cspan\u003e“I’d rather have a second burger than fries! Biking, hiking, skiing, gardening – we love it. We begrudgingly brought energy bars to fuel us through, despite the fact that they mostly don’t taste very good, and don’t work particularly well. In the summer of 2010, we planned a seven-day bike trip through the Northeast Kingdom and Champlain Valley of Vermont. I had tasted something vaguely similar to what is now Battenkill Brittle and decided to try to make something like it for our trip. My wife, has low blood sugar, so having a high-protein snack is imperative for her. We were literally astounded by how well this new snack worked on our trip. It powered us up the many Vermont hills! Best of all, it kept Liz’s blood sugar really even. When we got home, I had others taste it and soon they were clamoring for more. I realized that perhaps I had created something that was marketable.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAND THE BUSINESS? \u003c\/strong\u003eI was new to the food business, so I had a tremendous amount to learn. I began by perfecting the recipe, and coming up with a good shape and size for packaging. So many local, small food producers in Vermont were extremely generous with their time and advice. With their help, it took me about two months to put it all in place and secure my first accounts. Since then, the packaging and the process have evolved significantly. It is fun to look back at all the variations! \u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eHOW'S THE BRITTLE MADE? \u003c\/strong\u003eWhen I first began, I was baking in the kitchen in my house, but that quickly became unmanageable. So I started working at a nearby maple sugar shack that had a commercial kitchen, and then moved to an even bigger space shared with a local granola company. I decided to make the big investment, and I put a full commercial kitchen in my basement, so now I work from there. I get my ingredients from various, mostly local distributors and the maple syrup is produced a couple towns away.
