When we make a gin fizz, we like to use this American Dry Gin made by Greenhook Ginsmiths in Brooklyn, New York. This classic gin blends sharp juniper with a floral mix of elderflower and chamomile, and a bit of cinnamon spice. Head distiller Steven DeAngelo took a page from 17th-century French perfume-making techniques, using a mercury vacuum to reduce pressure and lower temperature in the still. He says it’s gentler on the botanicals, making the gin more aromatic.
