You know, nothing \u003cem\u003eover-the-top\u003c\/em\u003e.\u003c\/p\u003e\n\u003cp\u003eThe problem: It's 515-square-foot apartment in Brooklyn, which means preparing elaborate hors d’oeuvres for more than four is simply not possible unless I were to get started a few days in advance, which I never seem to do. My fiancé kept reminding me of these little details, to which I said, “Relax. I have a plan.”\u003c\/p\u003e\n\u003cp\u003eI didn’t. Cut to last Friday, the night of the party, and I’m leaving work a little later than planned. Guests would be arriving by 8 pm. This left me (please God, please) with just enough time to figure out said hors d’ouevres plan – which I promised myself would \u003cem\u003enot\u003c\/em\u003e be carrots and Ranch – walk the dog, hang up a strand of twinkly lights, find the perfect playlist, um, cook all the food, stock the fridge with all the bottles of Blanc de Blancs (which I did actually have the foresight to purchase in advance but hadn’t chilled yet), light every candle and find something to wear. The crackers are seriously flavorful and unlike anything you’d get at a bodega. The tapenade is blend of Parmesan, Asiago and buttery Kalamata olives, with a bright tang of capers and lemon juice. Addicting. \u003c\/p\u003e\n\u003cp\u003eI had a pre-sliced whole wheat baguette in the freezer (\u003cem\u003ealways\u003c\/em\u003e have a frozen baguette for such emergencies) which I now must microwave (gasp) to defrost. I crisp the slices in the oven, then arrange them on my large, wood cutting board and spread with a thick smear of Weybridge (the most crowd-pleasing cheese ever), and a little drizzle of \u003cstrong\u003eSpicy Honey\u003c\/strong\u003e I remember I had. Boom.\u003c\/p\u003e\n\u003cp\u003eNow I dump the chips in \u003ca href=\"https:\/\/www.mouth.com\/products\/snack-bowl-trio#variant=2005238852\" title=\"wooden snack bowls\"\u003e\u003cstrong\u003ewooden snack bowls\u003c\/strong\u003e\u003c\/a\u003e and place alongside the crème fraîche and tin of glistening caviar (thanks, babe). It’s become a classic.\u003c\/p\u003e\n\u003cp\u003eWe’re all about minty mashups here at Mouth. (If only we could've majored in this in college!)\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eAlcohol and Tannin\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp\u003eWhile most of what we know about alcohol we learned, er, outside of the classroom, alcohol serves an important purpose in wine’s overall balance (and, admittedly our own at times). Alcohol (specifically ethanol) is the main product of the yeast fermentation of natural grape sugars. The sugar level, or Brix, in the grapes when picked determines the final alcohol content of the wine. Measured as a percentage of total volume, average alcohol volumes range from 11 to 14 percent. Wines lower than 11 percent alcohol typically come from cooler climates, where grapes struggle to ripen and contain fewer sugars to convert into alcohol (or retain some sugar by design). Wines above 14 percent ABV come from very warm climates that produce very ripe grapes. Yeast stop functioning at 16 percent alcohol, so wines in the 17 to 22 percent range (like sherry, port, \u003cstrong\u003eMadeira\u003c\/strong\u003e, marsala and \u003cstrong\u003e\u003ca href=\"https:\/\/www.mouth.com\/products\/amberthorn-vermouth#variant=567419513\" title=\"vermouth\"\u003evermouth\u003c\/a\u003e\u003c\/strong\u003e) are, by definition, fortified. \u003c\/p\u003e\n\u003cp\u003eA spinning room isn’t the only thing you’ll notice as alcohol percentages rise. In dry wines, alcohol contributes to the body or weight of the wine in your mouth (aka, mouthfeel). Low-alcohol wines have a light body with a mouthfeel of skim milk. High-alcohol wines have a full body with a mouthfeel of whole milk or cream. In sweet wines, residual sugar will give a wine body even if the alcohol levels are low.\u003c\/p\u003e\n\u003cp\u003eWhen we swirl a wine and then admire its “legs,” we’re (supposed to be) noticing rivulets on the sides of the glass that relate to the surface tension differences between water and alcohol. The more alcoholic the wine, the slower the legs travel and the more defined they are. So, leggier isn’t better (at least in the wine world) – just higher octane. Wine’s alcohol is felt as warmth in the back of your throat. If a wine burns like a shot of \u003cstrong\u003ewhiskey\u003c\/strong\u003e, then it is considered out of balance or “hot” in wine speak. \u003c\/p\u003e\n\u003cp\u003eFinally, there are tannins (or “talons” as a blind date once upon a time called them not realizing that his error had some metaphoric validity to it). Tannins, organic compounds which come from the grapes’ seeds, skins and stalks, create a gripping, astringent sensation on the roof of your mouth. They are most often found in reds because of the juice’s skin contact, but small amounts can come from the oak barrels used to store wines. Tannins act as a natural preservative for a wine intended to age, giving it structure and “backbone.” Wines made from grapes with thick skins (like \u003cstrong\u003e\u003ca href=\"https:\/\/www.mouth.com\/products\/bei-de-rocchi-ranch-sonoma\"\u003eCabernet Sauvignon\u003c\/a\u003e\u003c\/strong\u003e) can be overly “grippy” in their youth, but tannins fade with age and soften with rich foods, so opt for either cellar time or a big, juicy T-bone with these powerhouse reds.\u003c\/p\u003e\n\u003cp\u003eIn a good, well-balanced wine, all of these components should meld seamlessly like instruments in an orchestra. At moments, one may play a solo, but in the end, they should all be in perfect harmony.
