What really keeps us coming back for more, though, is the balancing brightness of just a little lemon juice and, rare in the bottled chai world, fresh-pressed ginger. Grease a donut pan and set aside.\u003c\/li\u003e\n\u003cli\u003eIn a large bowl, combine flour, sugar, baking powder and salt. In a separate bowl, combine chai tea concentrate, egg and half of the melted butter. Add the wet ingredients to the dry and whisk until just combined.\u003c\/li\u003e\n\u003cli\u003ePour the batter into a large Ziploc bag and snip a triangle off one corner to create a makeshift pastry bag. Pipe the batter into the doughnut pan, filling each mold until almost full. Bake the doughnuts for about 10 minutes, or until a toothpick inserted into the center comes out clean. Turn out onto a cooling rack and let cool completely.\u003c\/li\u003e\n\u003cli\u003eMeanwhile, make topping. Place melted butter in a bowl. In a separate bowl, mix together cinnamon and sugar.
